Go-To Tomato Ragu

The most simple dish with fresh tomatoes and basil. It’s summer on a plate — bright, juicy, and effortless. 

Prep Time: 10 minutes
Cook Time: 40 minutes
Serves: 4

Ingredients:

  • 500g Monty & Sons Trumpet Pasta
  • 500g Tomatoes (Roma & Cherry as full of flavour)
  • Salt
  • 10 Cloves Garlic
  • 100g Butter
  • 1/2 cup Olive Oil
  • Handful Fresh Basil save some for plating
  • 1 cup store-bought grated Parmesan
  • Freshly ground black pepper

Method:

1. Preheat oven to 160C

2. Peel the garlic and cut in half. Cut tomatoes in half leave cherry toms whole. Roughly chop basil. Get a small roasting try or oven proof dish and fill it with all the tomatoes, garlic and thyme. Pour over olive oil and add butter. crack good amount of pepper along with a good pinch of salt. Put in the oven. Cook for 40 minutes.

3. Boil water, add salt and cook the pasta until al dente. 

4. Plate up. Add pasta to a bowl. Spoon over the tomatoes and garlic. Then season to taste, grate on some Parmesan and add some fresh leaves of basil. The buttery oil will be packed with flavour. Spoon this over to your taste.
